This special type of long pasta has a curly edge and originates from Neapolitan cuisine, it represents the refined palate of Neapolitan gastronomical tradition. They are also called ‘Mafaldine’ in honor of queen Mafalda of Savoia. Their curly edge looks like the frills that decorated dressed in those times. This unusual pasta shape is great for capturing sauces composed of different ingredients like our ‘Siciliana’ sauce.
