Typical pasta from Puglia and Basilicata. Its shape resembles small ears, giving it the name ‘Orecchiette’. It is usually enjoyed with turnip greens, cauliflower or broccoli (with lots of garlic, anchovies, and chili pepper) or with cold condiments.
