APERITIVO all’ITALIANA (for 2 person)

Italian style Aperitivo with Mortadella, Salame Nostrano, Sardinian Pecorino Cheese, Taralli (typical Apulian bakery product), Caper Berries in wine vinegar, marinated giant Green Olives and marinated black Olives. APERITIVO IS AN ALL-ITALIAN RITUAL that was born in the second half of the 1700 in Turin. It’s connected with a relaxed way of spending time together with small food and drinks.

CASERECCI AL RAGU’

Short pasta rolled like a small parchment, with ragū, a mixture of minced meat (beef and pork), LOVE, tomato paste, celery, carrots and onions, slow cooked on low heat for 12 hours, as in the traditional recipe of the grandmothers of Emilia Romagna. But don’t worry, you won’t have to wait that long!

REGINETTE al POMODORO e SUGO FINTO (suitable for vegetarian)

Long wavy tomato flavoured pasta Reginette with vegetable sauce, made from the same ingredients as ragu’, but of course without meat. Composed of slow cooked “Holy Trinity” (onions, celery and carrots), tomato sauce and topped with smoked ricotta. The so-called Sugo Finto (Fake Sauce) came to life when meat was not available.
