Baccalà, meaning cod, is dehydrated through a process of salting, then worked at length with milk, meaning ‘mantecato’, which makes it incredibly creamy. The term Baccalà is thought to originate from the Latin ‘baculus’ or stick, which perfectly describes the consistency of the dried fish. This is a traditional ingredient from Veneto, and more specifically, Venice. Thanks it its incredibly long shelf life, it was a favorite for sailors. Try it with our ‘Spaghettoni Aglio e Prezzemolo’ or simply on a piece of toasted bread!
