RawPasta Selection – Orecchiette
Orecchiette are one of Puglia’s iconic pasta shapes, especially those from the Bari area. Their concave shape and rough surface hold the sauce well, while the thick dough makes them pleasant to the palate and always al dente. They’re perfect with vegetables like broccoli or turnip greens, perhaps with the addition of sausage. Try them with meat or game ragu.
