Maccherone is one of the most loved pasta shapes by Italians to accompany the famous “Carbonara”, a traditional Roman sauce with egg yolk, pecorino cheese, black pepper and Guanciale (pork cheek preserved in salt and spices). We wanted to offer you the real traditional recipe, the one that every Italian would cook for you if you were invited home for dinner: you simply “sweat” the Guanciale cut into strips in a pan, add the pasta once cooked with a little cooking water, remove from heat, add the Carbonara sauce and mix until you get a creamy consistency that will completely coat your pasta. Garnish with a little grated pecorino and black pepper to your taste.
